John Greeley - Chef

John Greeley’s culinary interest started in his teens while working on Nantucket Island’s restaurants during the summer. Over the next few years, he spent summers cooking in New England, prior to attending New York City’s School of Visual Arts. He transferred to the Savannah (GA) College of Art and Design, where he was on the Dean’s List and received his B.F.A. in 1995.  During college, he was sous-chef at the acclaimed 45 South restaurant in Savannah’s historic district, where dishes were prepared with an emphasis on local ingredients.  Upon graduation, John returned to New York City and began working at ‘21’. He was quickly promoted to sous-chef. In 2002, he became opening sous-chef of The Upstairs at ‘21’, and is now chef of ‘21’.


John’s know-how with new American cuisine combined with his training in the fine arts provides a unique platform for his creations by using the freshest ingredients in tasty and visually exiting new ways. John’s wild game and fish dishes have wowed ‘21’ patrons for nearly 10 years. John is the media’s go-to-guy for holiday help: his untraditional wild turkey and breadless squash stuffing was syndicated November 2004 and 2005 by the Associated Press (and picked up by the Los Angeles Times among others!) When NBC’s TODAY Show needed a new twist on Christmas, John ably demonstrated his effortless “goof-proof” goose with dry rub and fresh huckleberry sauce. He has appeared twice on CBS’s Saturday Early Show “Chef on a Shoestring” and has made chili with David Tutera on Discovery’s The Party Planner.

John’s paintings and sculptures have been exhibited in galleries in both Savannah and New York City. His large-scale oil paintings range from cityscapes to still-lifes, and he has been recognized for his use of color and composition. John helped create the world’s largest painting of Elvis Presley, which was featured in the Guinness Book of World Records.  When he’s not in the ‘21’ kitchen, he can usually be found in his art studio. John resides with his lovely wife Amy Dickerson, daughter Summer Grace and baby son Hudson in Chatham, NJ.
